Dairy Free Pudding
It is possible to eat dairy free pudding!!  It will set to the right consistency with coconut milk.  And if you use chocolate it tastes like an almond joy candy bar!!  Make sure to check the label on the instant pudding mix but usually royal and jello pudding mixes are ok.  Especially if you stick to the plain flavors such as chocolate, vanilla and banana etc. 
1 box instant pudding mix
2 cups light coconut milk
Mix according to package directions and refridgerate. 
(Using full fat coconut milk is ok too but the fat content becomes very high.)

Dairy and Soy Free Smoothies
Here are several smoothie recipes.  They are so easily and very versatile.  These are just suggestions.  You can substitute anything you would like and change what you will.  Enjoy!
1 ½ cup milk alternative                                              2 ½-3 cups strawberry breeze juice
½- ¾ cup froz berries of any kind                   or         1 cupfrozen pineapples
1 teaspoon honey (only for kids >1 yr old)                ¾ cup froz whole strawberries
                                                                                    2 tsp honey (only for kids >1 yr old)

1 banana sliced                                                            ½ cup orange juice
½ cup strawberries                                          or         ¾ cup copped papaya
½ cup orange juice                                                      honey to taste
handful of ice cubes                                                    ½ cup ice

3 peeled kiwi                                                               1 cup milk alternative
1 cup frozen banana slices                                          ½ cup apple juice
¾ cup pineapple juice                                      or         1 cup berries of any variety
½ cup frozen strawberries                                           1 ripe banana
                                                                                    1 cup crushed ice

ice
1 mango (or frozen mango chunks)
handful raspberries or strawberries
1 banana
milk alternative to taste

 

Blend all ingredients and enjoy!!!

 

Chocolate Cake

2 cups flour
2 cups sugar
½ cup cocoa
½ cup plus 1 tbsp oil
1 egg
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1 tsp vanilla
2 cups boiling water

Mix all of the ingredients – spray 9 x 13 pan and bake at 325 for  approx  50 minutes.
